Searching schools he finally decided on a small private school in Glenview, Illinois named Dumas Pere L’ Ecole de la Cuisine Francaise. There William studied under Master Chef Snowden (as of the year 2005 the United States has only 70 Master Chefs and Master Pastry Chefs) and completed the course to certify him in French Culinary. William was given the opportunity to serve an apprenticeship under Michael Foley Chef/Owner of Printers Row Restaurant Chicago, Illinois. Chef Foley rated top American Chef for 3 years in the United States.
William continued to gain as much knowledge and technical skills working in top restaurants and Hotels throughout Chicago area. Before leaving Chicago, William worked at the Four Season Hotel as a food stylist in the catering department.
William arrived in Seattle, Washington in the early 90’s and made contacts quick with Chef Walter Pisano from Tulio’s restaurant and other big Hotels. Working at the Alexis Hotel, William worked as a butler for the Prince of Brunei at the APEC conference.
Wanting to help others and make a difference in the community, William joined forces with Common Meals a program to help homeless people get a chance to learn a trade getting a hand up, instead of a hand out. Moving out of the city and to the East side Redmond, Washington William decided to try something new so he became a barista with Starbucks, where he met his lovely wife Shannon. The two wed in the year 2000.
Not a long time in the fast pace of coffee William went back into the Hospitality industry and took on a position as Catering and Sales Manager at the Holiday Inn Issaquah and found working with the community and Chambers of Commerce very fulfilling. Shannon and William then started having children: Savannah Noel was born in 2001 and Seamus Wilson Cole was born in 2003. Having two children and a commute of over 100 miles a day William decided to find local work, so he could spend more time with his family.
Metropolitan Market in the Proctor area there is where William served as Assistant Deli Manager. Loving the Proctor area, both Shannon and William knew this is where they wanted a business. Being no strangers to the area with local artists, farmer’s market and great shops they found this the perfect place to have Dinner Solutions in 2004. He nurtured and grew the business. Like himself that business continued to grow and change.
Babblin’ Babs Bistro - A Unique Urban Eatery was born on August 5th 2006. " I cherish the great memories of cooking with my mother. Starting at the early age of 4, she’d pull out one of those cool retro stools in avocado green and position it right by the stove. Time to time we would forget who added the wine or if it was added …and you guessed it a little gravy with your wine was created." Chef Mueller's bistro is filled with all the warmth and love that he grew up with, he and his wife continue this tradition with their son, Seamus - AKA - little chef. "We strive to ensure that with every meal you receive an experience like nowhere else, in flavor, texture and atmosphere."
"None of this would be possible without my maker or my wife, Shannon for her support, hard work and patience with all my crazy and sleepless (but inspired) nights. Most of all our daughter Savannah for her beautiful smile every morning and ensuring us with a big kiss that we are the best! "
