Chef William’s fabulous mother - of course!! The bistro is in honor of my mother who passed in 1999. At that time, we produced a beer to honor her fun loving memory, the result? Babblin Babs Blonde Beer with the label “This fine beer was brewed with all the Love, Laughter & Song that radiated from Babs. Each bottle will give you the spirit of Life & Perpetual Motion to get you through the night. Drink one too many and you could find yourself BABBLIN’ too! Drink and drive responsibly. Love, Babs”. Babblin’ Babs Bistro - A Unique Urban Eatery was born on August 5th 2006. I cherish the great memories of cooking with my mother. Starting at the early age of 4, she’d pull out one of those cool retro stools in avocado green and position it right by the stove. Time to time we would forget who added the wine or if it was added …and you guessed it a little gravy with your wine was created. Our bistro is filled with all the warmth and love that I grew up with, we continue this tradition with our son, Seamus - AKA - little chef. We strive to ensure that with every meal you receive an experience like nowhere else, in flavor, texture and atmosphere.
My specials are just those…special, one-of-a-kind recipes, most likely never to be repeated. Sad, but very true.
As a small family business we only purchase from like, family owned businesses, so we know who has touched everything before it comes through our doors. The benefit to you is the freshest and best quality, with the additional benefit, that you are also supporting 12-15 families - just like us.
Walking into the bistro you’ll experience an exotic array of great aromatic aromas, herbs, fresh handmade soups, roasting foods and special desserts. We do not use products that have nitrites, MSG or any long list of chemicals. We add NO sodium to our food. We carefully search for the most natural product available.
Every day we are creating new ideas to please the simplest to the most sophisticated palate. Ask my wife who routinely gets woken up in the middle of the night with a new idea for a new inspiration. Poor Shannon! I have a deep passion for food and appreciate its natural beauty, always handling it with respect. We started doing dinners at an affordable price with wines and beer, so we could give you an experience that you can enjoy more frequently. Indeed, we are much more than a sandwich shop and have great world fusion of foods. With a classic French culinary training and working with top chefs near and far, I have discovered “my style” of cooking. I love to create powerful creations, new combinations that insure a WOW factor, new culinary surprises coming of, not knowing, these simple & fresh ingredients would be so incredible together. I want you to experience fresh new flavors that erupt in your mouth making a happy palate, having a unique culinary experience.
We have just opened a private conference/dining room, showcasing local artists’ talents. Seating to 18 guests offer a night to remember. The whole bistro is available for special events, we offer seating to 36. I will personalize your own menu. We have just introduced “An Evening with the Chef” every third Saturday of each month.

None of this would be possible without my maker or my wife, Shannon for her support, hard work and patience with all my crazy and sleepless (but inspired) nights. To our beautiful daughter Savannah for helping before school setting the dining room and ensuring us with a big kiss that we are the best!!
