Double Lone Star Baby Back Ribs

Just like Texas this Big Bold taste of spice is doubled!!  The ribs are with our Lone star spice mixture of ancho peppers, chili, garlic and onion.  Slowly cooked, then finished with a dark rum, New Mexican chili, Walla Walla onions, cumin, and lots of other spices that has simmered over 18 hours and glazing each and every rib to perfection!!

West African Ahi Tuna with Cilantro Butter*

Italian Green Lip Crusted Mussels

 Fresh hand made chipotle pasta, and then filled with black bean, cilantro and other Mexican spices to these delightful pillows.  We finish them off with a light cilantro jalapeno and walnut pesto with Manchago cheese.

Hawaii Oven Roasted Pork

Fresh banana leaves wrap this fresh pork in ginger, amino acid, garlic, and chardonnay fume oil. Slow roasted all day, then shredded with more chardonnay fume oil and natural juices.  Plated with pineapple coconut cornbread, slaw, and Basmati coconut rice with a ginger pesto swirl. Served with fire water and Hawaiian salt.
